2. Put a layer of sand, about 2" or 3" deep, in the bottom of the larger pot.
3. Place the smaller pot inside of the larger pot, centered.
4. Fill the space between the smaller and larger pot with sand to a level just below the top of the inner pot.
5. Place the lid on top of the smaller, center pot.
6. Slowly and evenly pour water into the sand between the two pots. The water does NOT have to be cleansed or dissinfected. The proper amount of water is that the all the sand is wet, but not so much that water pools on the top of the sand.
7. Place the food you wish to preserve inside the smaller pot and place the lid on top.
8. Place a towel on top of both pots so they are completely covered.
